Ingredients

  • 1 large whole orange
  • 3 eggs
  • 2 cups gluten free oats or regular oats
  • 2 teaspoons baking powder
  • 1 pinch sea salt
  • ¼ cup neutral oil
  • ⅓ cup Greek yogurt or thick dairy free yogurt
  • ¾ cup maple syrup or liquid sweetener
  • ½ cup powdered sugar or powdered monk fruit
  • Milk of choice, added slowly
  • Fresh orange zest


Instructions

  1. Preheat oven to 350°F and line an 8 inch round pan with parchment paper.
  2. Wash the orange well, cut into chunks, and remove any seeds.
  3. Add all cake ingredients to a high speed blender and blend until completely smooth.
  4. Pour batter into the prepared pan.
