Description

This sweet pickled red onion recipe is crunchy, tangy, and perfectly balanced with a touch of sweetness. These quick pickled onions are perfect for tacos, sandwiches, burgers, salads, grain bowls, and easy meal prep.

Ingredients

Scale
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves
  • 1 teaspoon red pepper flakes
  • 1 cup distilled white vinegar
  • 1 cup water
  • 3 tablespoons sugar
  • 1 teaspoon kosher salt

Instructions

  1. Thinly slice the red onion and place it into a clean jar.
  2. Add garlic cloves and red pepper flakes to the jar.
  3. In a saucepan, combine vinegar, water, sugar, and salt.
  4. Heat over medium heat while stirring until sugar and salt dissolve completely.
  5. Pour the warm brine over the onions.
  6. Let the jar cool for 10 minutes.
  7. Refrigerate for at least 30 minutes before serving.
  8. Store leftovers in the refrigerator.

Notes

Let the onions chill overnight for the best flavor and vibrant pink color. Store refrigerated in an airtight jar for up to 3 weeks. Add jalapeños for extra heat or use apple cider vinegar for a fruitier flavor.
