  • ¾ cup butter, unsalted
  • ½ cup yellow onion, diced
  • ½ cup celery, diced
  • 1 ½ teaspoons salt
  • 1 teaspoon poultry seasoning

  • ½ cup chicken broth
  • 2 large eggs
  • 10 cups whole wheat bread, cubed and dried overnight
  • ½ cup fresh parsley, chopped

Instructions

  1. Preheat & Prep: Preheat oven to 375°F (190°C). Line a large baking sheet with greased aluminum foil.
  2. Sauté Aromatics: In a large skillet over medium heat, melt butter. Add onion and celery and sauté 5 to 7 minutes until soft and translucent.
  3. Season: Stir in salt, poultry seasoning, and black pepper. Cook 1 minute until fragrant. Remove from heat.
  4. Combine Wet Ingredients: In a large bowl, whisk chicken broth and eggs.
  5. Mix Stuffing: Fold bread cubes and parsley into the egg mixture. Pour in the sautéed vegetables and toss until evenly combined.
  6. Form Balls: With damp hands, form 24 balls about 2 inches wide. Place on prepared sheet, spaced slightly apart.
  7. Bake: Bake 20 to 25 minutes, until golden brown with a crisp exterior. Serve warm and enjoy.
