Ingredients

Scale
  • 1 tablespoon olive oil
  • 4 chicken cutlets or 2 chicken breasts sliced
  • Salt and pepper
  • 5 ounces fresh spinach
  • 1 half pound strawberries sliced
  • 1 half red onion sliced
  • 1 half cup feta or goat cheese
  • Mixed nuts or seeds
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper

Instructions

  1. Heat olive oil in a skillet and cook chicken for about 5 minutes per side until done
  2. Let chicken rest then slice into strips
  3. Whisk together all dressing ingredients
  4. Add spinach strawberries onion nuts and cheese to a bowl
  5. Top with chicken drizzle dressing and toss gently
