It looks impressive. It tastes like something from a bakery. But it is simple, dependable, and made with everyday ingredients. Just the way I like it.

This strawberry shortcake recipe has soft vanilla cake layers, fresh juicy strawberries, and fluffy whipped cream that actually holds its shape. It is the kind of dessert that makes people go quiet after the first bite.

Why This Strawberry Shortcake Recipe Works

I grew up making desserts from scratch with my mom, standing on a stool and trying not to spill flour everywhere. Strawberry shortcake was always one of those desserts that felt special but still simple.

This version keeps that nostalgic flavor but turns it into an easy layer cake that works for:

It is classic, comforting, and completely doable.

Ingredients You'll Need

Quantities are listed in the recipe card below for easy printing and saving.

For the Vanilla Cake

• All purpose flour
• Baking powder
• Salt
• Granulated sugar
• Vegetable or canola oil
• Eggs and egg whites
• Vanilla extract
• Almond extract optional
• Sour cream
• Milk

If you do not have sour cream, use full fat Greek yogurt. I have tested it both ways.

For the Strawberry Filling

• Fresh strawberries
• Strawberry jam

The jam gives the berries a glossy finish and boosts the sweetness without needing extra sugar.

For the Whipped Cream Frosting

• Cream cheese
• Powdered sugar
• Vanilla extract
• Cold heavy whipping cream

The cream cheese stabilizes the whipped cream so it holds up beautifully on the cake.

How To Make This Strawberry Shortcake Recipe

Step 1 Make the Cake

Preheat your oven to 350 degrees.

Mix the dry ingredients in one bowl. In another bowl beat the sugar, oil, eggs, egg whites, and extracts. Stir in sour cream. Slowly add the dry ingredients and milk just until combined.

Do not overmix. That is how cakes turn dense.

Divide into three 8 inch pans and bake until a toothpick comes out clean. Let the layers cool completely before assembling.

I often bake the layers earlier in the day while I am already in the kitchen making dinner. It saves time later.

Slice the strawberries and gently stir them with the jam.

If you have extra time, let them sit for 30 minutes. They get even juicier.

Step 3 Make the Stabilized Whipped Cream

Beat the cream cheese, powdered sugar, and vanilla until smooth.

Slowly pour in the cold heavy cream while mixing. Increase speed and whip until stiff peaks form.

Cold cream is important. If your kitchen runs warm like mine in the summer, chill the bowl first.

Step 4 Assemble the Cake

Place one cake layer on a serving plate.

Spread whipped cream on top. Add a layer of strawberries.

Repeat with the next layer.

Top with the remaining whipped cream and pile fresh strawberries in the center.

It does not need to be perfect. A slightly rustic look makes it feel homemade and welcoming.

Because life is busy and we do not always have hours to bake.

• Bake cake layers one day ahead
• Wrap and refrigerate
• Make frosting ahead and re whip before using
• Assemble the day you serve

This strawberry shortcake recipe is best the day it is assembled, but planning ahead makes it stress free.

Ingredients

  • 2 ½ cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¾ cups granulated sugar
  • ½ cup vegetable or canola oil
  • 2 large eggs room temperature
  • 2 large egg whites room temperature
  • 2 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract optional
  • ⅔ cup sour cream
  • ¾ cup milk room temperature
  • 3 cups fresh strawberries sliced or diced
  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2 ¼ cups cold heavy whipping cream


Instructions

  1. Preheat oven to 350 degrees. Grease and line three 8 inch cake pans.
  2. Whisk flour, baking powder, and salt.
  3. Beat sugar, oil, eggs, egg whites, and extracts. Mix in sour cream.
  4. Alternate adding dry ingredients and milk. Mix just until combined.
  5. Divide batter evenly between pans.
  6. Bake 18 to 22 minutes or until toothpick comes out clean. Cool completely.
  7. Stir strawberries with jam.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth. Slowly add heavy cream and whip until stiff peaks form.
  9. Layer cake, whipped cream, and strawberries. Repeat.
  10. Refrigerate until ready to serve. Bring to cool room temperature before slicing.

Notes

Store covered in the refrigerator. For best texture allow cake to sit at cool room temperature for 20 to 30 minutes before serving.
