Skip the long lines and soggy sandwiches—this homemade Starbucks Tomato Mozzarella Panini Copycat is bringing the flavor straight to your kitchen. Made with blistered cherry tomatoes, fresh basil pesto, and melty mozzarella on crispy sourdough, it’s everything the original wishes it could be.

You don’t need a fancy panini press or a gourmet deli to whip this up—just a baking sheet and a skillet. This sandwich is perfect for busy weekday lunches, lazy weekend brunches, or when you're just craving that cozy Starbucks vibe without the $8 price tag.

Whether you’re team “no spice” or love a little kick, you can easily tweak this to your taste. Plus, with real ingredients you can pronounce, it’s healthier, heartier, and a whole lot more satisfying than the drive-thru version.

Ingredients You’ll Need

 1 pint fresh cherry tomatoes
 2 tablespoon extra virgin olive oil
 2 tablespoon balsamic glaze
 ½ teaspoon coarse sea salt
 ¼ teaspoon black pepper
 ½ teaspoon red pepper flakes (optional)
 4 tablespoon softened butter
 8 slices sourdough bread (or 4 large slices)
 6 ounces fresh mozzarella cheese
 ½ cup basil pesto
 6 –8 fresh basil leaves

How to Make the Starbucks Tomato Mozzarella Panini Copycat

Step 1: Roast the Tomatoes

Preheat your oven to 400°F. Toss the cherry tomatoes on a baking sheet with olive oil, balsamic glaze, sea salt, black pepper, and red pepper flakes. Roast for about 20 minutes until the tomatoes are blistered and slightly charred.

Step 2: Build the Sandwiches

While the tomatoes are roasting, butter one side of each slice of bread. Lay them butter-side down on a cutting board. Spread the pesto evenly on the inside of each slice. Layer mozzarella on four slices, then top with the roasted tomatoes and fresh basil. Close the sandwiches with the remaining slices, buttered side facing out.

Step 3: Grill to Perfection

Using a panini press: Preheat it and grill for 4–6 minutes until the bread is golden and crisp.

 

Using a skillet: Heat a cast iron pan or grill pan over medium-low. Place a sandwich in the pan, cover with parchment, and press it down using another skillet. Cook each side for 4–6 minutes until golden and melty.

Cut the sandwiches in half and serve immediately. They pair beautifully with tomato basil soup or a light side salad.
