What Goes Into Shrimp Tortellini Pasta Salad

Cheese Tortellini

Soft, cheesy pasta pillows that make this salad hearty enough for dinner.

Fresh or frozen both work great. I usually grab what is on sale.

Shrimp

Shrimp cooks fast and adds lean protein that keeps this salad satisfying.

I use peeled and deveined shrimp to save time. Tail on or off is totally up to you.

Fresh Crunch

• Thin sliced red onion • Crisp celery • Fresh parsley • Fresh basil

These keep the salad bright and fresh.

Salty Little Flavor Boosters

• Capers • Black olives

Just enough to make every bite interesting.

The Light Lemon Dressing

This dressing is fresh and simple. No heavy sauces.

I whisk together:

• Olive oil • Fresh minced garlic • Red wine vinegar • Fresh lemon juice • Kosher salt • Black pepper

That lemon and garlic combo wakes everything up.

How I Make It Step by Step

1. Cook the Tortellini

Bring a large pot of salted water to a boil.

Cook tortellini according to the package. Drain and rinse under cold water so it stops cooking.

2. Cook the Shrimp

Bring the water back to a gentle boil.

Add shrimp and cook just until pink, about 2 to 3 minutes.

Drain and rinse under cold water. Chop into bite size pieces.

Whisk all dressing ingredients together in a small bowl until combined.

4. Toss the Base

In a large bowl, combine:

• Red onion • Celery • Capers • Olives

Do Not Overcook the Shrimp

They cook fast. Once pink, they are done. Overcooked shrimp get rubbery.

This is your only chance to season the tortellini itself.

Description

A fresh and satisfying shrimp tortellini pasta salad loaded with crisp vegetables, briny olives and capers, tender shrimp, and herbs, all tossed in a bright lemon garlic dressing. Perfect for meal prep, gatherings, or an easy main or side.


Ingredients

Scale
  • 8 ½ oz cheese tortellini
  • 2 lbs jumbo shrimp, peeled and deveined
  • ¼ small red onion, thinly sliced
  • 2 celery stalks, sliced
  • 1 oz capers
  • ¼ cup sliced black olives
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 small clove garlic, minced
  • ½ tablespoon red wine vinegar
  • Juice of 1 fresh lemon
  • ¾ teaspoon kosher salt
  • Fresh black pepper to taste


Instructions

  1. Cook tortellini in salted boiling water according to package directions. Drain and rinse under cold water.
  2. Return water to a boil. Add shrimp and cook 2 to 3 minutes until pink. Drain, rinse with cold water, and chop.
  3. Whisk dressing ingredients together in a small bowl.
  4. In a large bowl, combine onion, celery, capers, and olives. Toss with dressing.
  5. Add shrimp, tortellini, parsley, and basil. Toss gently until evenly coated.
  6. Chill before serving.

Notes

Perfect as a main dish or side. Make ahead friendly. Add extra lemon juice for more brightness. Calories are approximate per serving.
