Every year when Shamrock Shakes make their appearance, I get so excited. There is just something about that minty, creamy flavor that feels like spring has officially arrived. And while I love the classic shake, I also love turning favorite treats into easy desserts I can share.

It has all the flavors you love in a Shamrock Shake but in an easy no bake pie form. It is creamy, light, perfectly minty, and comes together with almost no effort. No oven. No stress. Just a fun dessert that feels right at home on any St Patrick's Day table.

This is one of those desserts I keep coming back to because it is so simple and always a hit.

Vanilla instant pudding mix
Milk
Cool Whip thawed
Mint extract
Green food coloring optional
Store bought graham cracker pie crust

How To Make Shamrock Shake Pie

Start by adding the pudding mix and milk to a large bowl. Whisk until smooth and fully combined.

Next gently fold in the Cool Whip, mint extract, and green food coloring. Stir until everything is evenly mixed and you get that pretty green color.

Pour the filling into the prepared pie crust and smooth out the top.

Place the pie in the refrigerator and let it chill until fully set. This usually takes about four hours, but overnight works great too.

Once set, slice and serve with whipped cream and a cherry if you want to make it extra fun.

This shamrock shake pie is perfect for making ahead of time.

Keep it covered in the refrigerator until you are ready to serve. It will stay fresh for a couple of days.

If you want a firmer texture, you can also freeze it and let it sit out for a few minutes before slicing.

Helpful Tips From My Kitchen

Be sure to use instant pudding mix and not cook and serve.

Mint extract is strong, so a little goes a long way.

Cool Whip works best here because it is stabilized and helps the pie set properly.

If you want extra mint flavor, add just one or two additional drops at a time.

Easy Variations To Try

Swap the graham cracker crust for a chocolate cookie crust.

Use an Oreo crust for an extra fun twist.

Top with chocolate shavings, crushed cookies, or festive sprinkles.

Add a drizzle of chocolate syrup right before serving.

Description

This shamrock shake pie has all the flavors of the classic minty shake, but in a creamy, no bake pie. It's festive, simple, and comes together with just a few ingredients.


Ingredients

Scale
  • 2 boxes vanilla instant pudding mix (3.4 ounces each)
  • 2 cups milk
  • 8 ounces Cool Whip (thawed)
  • 0.5 teaspoon mint extract
  • 16 drops green food coloring (optional)
  • 1 store bought graham cracker pie crust


Instructions

  1. In a large bowl, whisk together the pudding mix and milk until smooth.
  2. Fold in the Cool Whip, mint extract, and green food coloring.
  3. Pour the mixture into the prepared pie crust.
  4. Refrigerate until fully set, about four hours or overnight.
  5. Slice and serve with whipped cream and a cherry if desired.
