Soft, chewy protein cookies made with Greek yogurt and no protein powder! Easy, quick, and packed with flavor.
Ingredients

- 1 cup (220 g) firm Greek yogurt, low-fat or full fat
- 1 large egg
- ⅓ cup (80 g) granular sweetener (like monk fruit, coconut sugar, or brown sugar)
- 1 cup (100 g) almond flour (or oat flour)
- ½ tsp vanilla extract (optional)
- Pinch of salt
- Mix-ins: chocolate chips, nuts, berries, or anything you love
Instructions
- Preheat oven to 375°F (190ºC). Line a baking sheet with parchment paper.
- In a bowl, mix together Greek yogurt, egg, sweetener, vanilla, and salt until smooth.
- Gradually mix in almond flour until a dough forms. Add more flour if it’s too sticky, more yogurt if too dry.
- Stir in your favorite mix-ins.
- Scoop dough into 8–9 cookies and arrange on the prepared baking sheet.
- Bake for 10–12 minutes until the edges are light golden brown.
- Cool completely before eating. Enjoy!
Notes
Store in an airtight container in the fridge for 4 days or freeze for up to 3 months. Great warm or straight from the freezer!
