If you have ever tried a high protein snack that tasted more like chalk than a treat, you are not alone. I have been there too. That is exactly why I love these protein balls high protein low carb. They actually taste good and feel like something you want to eat, not something you force down.

These are my go to when I want a low carb snack that still keeps me full. They are no bake, come together fast, and use a nut butter base to keep the carbs lower while packing in the protein.

They are perfect for busy afternoons, after workouts, or those moments when you want something chocolatey without going overboard.

Low Carb Chocolate Peanut Butter Protein Balls

These come together in about ten minutes, which makes them perfect for busy days.

Ingredients

  • Protein powder
  • Natural peanut butter or almond butter
  • Flax meal or chia seeds
  • Unsweetened cocoa powder
  • Liquid sweetener
  • Unsweetened almond milk

  1. I start by mixing the protein powder, flax meal or chia seeds, and cocoa powder in a medium bowl.
  2. Next, I stir in the nut butter and sweetener. At this point, the mixture will look crumbly and that is normal.
  3. I add almond milk one tablespoon at a time until the dough reaches a soft play dough texture. It should roll easily without sticking to your hands.
  4. I scoop about one tablespoon at a time and roll into balls.
  5. I place them on a plate and chill for at least thirty minutes so they firm up.

Helpful Tips From My Kitchen

  • If you use a plant based protein powder, you will probably need a little more almond milk. Those powders soak up more liquid.
  • Store these in an airtight container in the fridge. They keep well for about a week.
  • If your carb goals allow, a few sugar free dark chocolate chips make a fun add in.

Do not stress if they are not perfectly round. Homemade snacks do not need to look perfect to taste good.

Description

These no bake protein balls are high in protein, low in carbs, and taste like a treat instead of a supplement. They are perfect for busy days, workouts, or afternoon snacks.


Ingredients

Scale
  • 1 half cup protein powder chocolate or vanilla whey or casein
  • 1 half cup natural peanut butter or almond butter no added sugar
  • 2 tablespoons flax meal or chia seeds
  • 1 tablespoon unsweetened cocoa powder
  • 1 to 2 tablespoons liquid sweetener stevia or monk fruit adjust to taste
  • 1 to 3 tablespoons unsweetened almond milk as needed


Instructions

  1. In a medium bowl, mix together the protein powder, flax meal or chia seeds, and cocoa powder
  2. Add the nut butter and liquid sweetener and stir until the mixture looks crumbly
  3. Add almond milk one tablespoon at a time, mixing after each addition, until the dough reaches a soft play dough consistency
  4. Scoop about one tablespoon of dough and roll into a ball
  5. Place the balls on a plate or tray and refrigerate for at least 30 minutes to firm up

Notes

If using plant based protein powder, you may need extra almond milk. Store in an airtight container in the fridge for up to 7 days. Freeze for up to 3 months for easy grab and go snacks. Optional add in is sugar free dark chocolate chips if carbs allow.
