Pork belly chicharron tacos are made from roasted pork belly that becomes crispy on the outside and tender on the inside.

The skin crisps up into that classic chicharron texture. The inside stays juicy and flavorful. Then it gets sliced, crisped a little more in a skillet if needed, and tucked into warm tortillas.

Top it with salsa, onions, cilantro, and a squeeze of lime.

Season the bottom with salt. Season the skin generously with salt and pepper. If using five spice and soy sauce, rub that into the meat side only.

Let it sit at room temperature for about 30 minutes.

Preheat your oven to 500 degrees.

Place the pork belly on a wire rack over a lined baking sheet, skin side up.

Roast at 500 degrees for 25 to 30 minutes to start crisping the skin.

Reduce the heat to 325 degrees and continue roasting for about 1½ to 2 hours, until the skin is deeply golden and crispy.

Step 4 Rest and Slice

Remove from the oven and let it rest for 10 minutes.

Slice into half inch pieces.
