Preheat oven to 375 degrees and line a muffin pan with liners.
In a large bowl, mix the dry ingredients.
Add the wet ingredients and mix until smooth.
Fold in optional mix ins if using.
Divide batter evenly into 12 muffin cups.
Bake for 10 minutes at 375 degrees, then lower oven to 350 degrees and bake another 10 to 12 minutes.
Cool in the pan for 5 minutes, then transfer to a wire rack.

Do not underbake or muffins may collapse as they cool.
