Ingredients

For the French Toast:

  • 6 large eggs
  • 1 cup blueberries
  • 2 cups milk (any kind)
  • ¼ cup granulated sugar

Step-by-Step Instructions

  1. Prep the casserole: Grease a 13x9-inch baking dish. Arrange bread cubes in an even layer. In a large bowl, whisk eggs, milk, sugar, lemon zest, lemon juice, and vanilla. Pour half over bread, toss gently, then add remaining mixture. Cover and refrigerate at least 2 hours or overnight.
  2. Bake: Preheat oven to 350°F (175°C). Uncover casserole and bake 40 minutes, or until golden brown and center is set.

Make the Lemon Blueberry Sauce

  1. In a saucepan, combine sugar, cornstarch, ¾ cup water, and lemon juice. Cook over medium heat, stirring constantly, until it boils.
  2. Add blueberries and continue cooking, stirring often, until thickened and berries begin to burst.
  3. Keep warm until serving.

Serving Suggestion: Spoon sauce over each portion and add a dollop of whipped cream for extra indulgence.

Tips & Variations

  • Swap blueberries for raspberries or blackberries for a twist.
  • Add ½ teaspoon almond extract to the custard for a bakery-style flavor.
  • Top with sliced almonds before baking for crunch.
  • Serve with crispy bacon or sausage for a sweet-and-savory plate.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 325°F until warmed through. Sauce can be made ahead up to 3 days; store in fridge and reheat gently.
