What makes this marshmallow swirl ice cream so special? The magic is in the homemade swirl. No store-bought shortcuts here, just glossy, fluffy marshmallow perfection blending beautifully with the custard. Every scoop is creamy, dreamy, and streaked with those picture-perfect marshmallow ribbons. And the fun doesn’t stop there. Toast the marshmallow swirl for a campfire twist or turn it into s’mores ice cream sandwiches. You can even add chocolate and almonds for a rocky road version. Ingredients You'll Need

For the Ice Cream Base

 2 cups (454g) whole milk
 2 cups (454g) heavy cream
 1 tablespoon pure vanilla extract or vanilla bean paste
 4 large egg yolks
 ½ cup (99g) granulated sugar
 ¼ teaspoon xanthan gum

For the Homemade Marshmallow Swirl

 3 large egg whites, room temperature
 ½ teaspoon cream of tartar
 ⅓ cup (74g) water
 ¾ cup (149g) granulated sugar
 ¾ cup (234g) light corn syrup or honey
 1 teaspoon pure vanilla extract

How to make marshmallow swirl

Make the Ice Cream Base

Heat milk and cream in a saucepan over medium-high heat until gently simmering. Stir in vanilla, then remove from heat. Let steep for 30 minutes.

In a bowl, whisk egg yolks, sugar, and xanthan gum until pale and airy.

Slowly whisk the warm milk mixture into the yolks.

Return to low heat and cook, stirring constantly, until it thickens and reaches 170 to 180°F.

Cool to room temperature, then refrigerate for at least 2 hours or overnight.

Make the Marshmallow Swirl

Place egg whites and cream of tartar in a stand mixer bowl.

Combine water, sugar, and corn syrup in a saucepan. Heat without stirring until 240°F.

While the syrup heats, beat egg whites to soft peaks.

With the mixer on medium-low, slowly drizzle the hot syrup into the whites. Beat for 7 to 8 minutes until thick and glossy. Add vanilla and beat 1 more minute.

Assemble the Ice Cream

Churn the custard in an ice cream maker until thick but still soft.

Fold in 1 ½ cups marshmallow swirl, leaving visible streaks for that signature look.

Toasted marshmallow swirl adds a smoky sweetness that pairs perfectly with graham crackers. Lightly torch sections of the swirl before folding it into the ice cream for a s’mores-inspired flavor.
