Description

A hearty breakfast casserole layered with hash browns, sausage, bacon, eggs, cheddar cheese, and creamy gravy—perfect for brunch or family gatherings.


Ingredients

  • 30 oz frozen shredded hash browns
  • 1 lb cooked sausage, drained
  • 12 oz bacon, cooked and chopped
  • 2 cups shredded cheddar cheese, divided
  • 1 package country gravy mix (prepared with 2 cups water)
  • 6 large eggs, beaten
  • Salt, pepper, garlic powder to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cook bacon at 400°F until crispy (25 mins). Cook sausage and drain.
  2. Grease a 9x13 dish. Spread hash browns, then layer sausage, most bacon, and 1 cup cheese. Season well.
  3. Prepare gravy per package. Pour over mixture and gently stir.
  4. Whisk eggs, pour evenly, and sprinkle remaining cheese on top.
  5. Bake at 375°F for 45 minutes until eggs are set and golden brown.
  6. Top with reserved bacon and green onions. Serve hot.

Notes

To prep ahead, assemble the dish and refrigerate overnight. Reheat leftovers in the oven for best texture.
