Description
Creamy, lemony overnight oats with a graham cracker crust and tangy Greek-yogurt topping. High-protein, make-ahead, and delicious.

- 2 graham crackers, crushed
- 1 teaspoon milk of your choice
- 1/2 cup quick, minute, or rolled oats
- 1 tablespoon chia seeds
- 2 tablespoons vanilla protein powder (optional)
- 1/2 cup milk of your choice
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon lemon zest (about half a medium lemon)
- 1/2 cup plain Greek yogurt
- 1 teaspoon honey
- 1 tablespoon light cream cheese (optional)
- 1 tablespoon lemon juice (about half a medium lemon)
Instructions
- Set out three small bowls. In the first, mix crushed graham crackers with 1 teaspoon milk to form a damp crumble.
- In the second, stir together oats, chia seeds, protein powder (if using), 1/2 cup milk, vanilla, and lemon zest until fully hydrated.
- In the third, whisk Greek yogurt, honey, light cream cheese (if using), and lemon juice until smooth.
- Press the graham crust lightly into the bottom of a 12–16 oz jar.
- Spoon the oat mixture over the crust, then top with the cheesecake mixture.
- Cover and chill at least 2 hours or overnight.
- Before serving, garnish with extra crushed grahams and lemon zest.
Notes
Gluten-free: Use GF graham crackers or almond-flour cookie crumbs. Dairy-free/vegan: Use plant milk, plant yogurt, maple syrup, and vegan cream-cheese style spread. Storage: Refrigerate up to 3 days; add crunchy toppings just before serving. Nutrition will vary based on milk, yogurt, and protein powder chosen.
