These keto lime mousse cups are creamy refreshing and honestly feel a little fancy without any extra work. They are perfect for weeknights family get togethers or those moments when you just want a sweet treat without turning on the oven.

Ingredients for Keto Lime Mousse Cups

Heavy whipping cream
Low carb sweetener like monk fruit or erythritol
Lime juice key lime or regular both work
Lime zest
Unflavored gelatin
Cold water and hot water

Nothing fancy and nothing hard to find.

How I Make Keto Lime Mousse Cups

First I bloom the gelatin in cold water then stir in hot water until fully dissolved. I set it aside to cool slightly.

Next I whip the heavy cream with the sweetener and lime zest until stiff peaks form. This step gives the mousse that light fluffy texture.

Then I slowly mix in the gelatin and lime juice just until everything is smooth.

I spoon the mixture into small cups or jars and refrigerate for at least two hours until set.

Serving Ideas I Love

Most of the time we eat these just as they are but if I am serving guests I like to add a little something extra.

A spoon of whipped cream
Extra lime zest on top
A thin lime slice for color
Serve in clear cups for a pretty presentation

They look impressive with almost no extra effort.

Storage Tips

I usually make these the night before.

Store covered in the refrigerator
They keep well for up to three days
Freezing is not recommended because the texture changes

Description

These keto lime mousse cups are creamy, refreshing, and feel a little fancy without any extra work. Perfect for busy weeknights, family gatherings, or a sweet treat without turning on the oven.


Ingredients

  • 1 envelope unflavored gelatin
  • ¼ cup cold water
  • ⅓ cup hot water
  • ½ cup low carb sweetener (monk fruit or erythritol)
  • 1 tablespoon lime zest
  • 2 cups heavy whipping cream
  • ⅔ cup lime juice (key lime or regular)
