This is what I make when I want the cozy flavor of hot chocolate, but with a spoon. It is thick, creamy, and honestly feels like a little treat at the end of a busy day. No baking. No fancy tools. Just a saucepan, a whisk, and about ten minutes of hands on time.

This recipe is basically hot chocolate that decided to slow down and thicken up. Instead of using flour or cornstarch, I use gelatin to give it that smooth pudding texture while keeping it keto friendly.

Ingredients You Will Need

  • Heavy cream
  • Unflavored gelatin powder
  • Powdered keto sweetener
  • Unsweetened cocoa powder
  • Vanilla extract
  • Sea salt

One quick tip from my kitchen. Powdered sweetener really matters here. Granulated sweeteners can make the pudding gritty, and that is never what we want.

How I Make Keto Hot Chocolate Pudding

This recipe is very forgiving, which is exactly what I need on busy days.

Step 1 Bloom the gelatin

I pour a little cold cream into a bowl, sprinkle the gelatin evenly on top, and whisk right away. Then I let it sit while I start heating the rest of the ingredients. It should look thick and gelled.

Step 2 Heat the chocolate base

In a saucepan over medium low heat, I whisk together the remaining cream, cocoa powder, sweetener, and salt. I whisk the whole time until it is smooth and just starting to bubble. I make sure not to let it boil.

Step 3 Finish the pudding

I remove the pan from the heat, stir in the vanilla, then whisk in the bloomed gelatin until everything is smooth.

If I want warm keto hot chocolate pudding, I serve it right away.
If I want classic pudding, I pour it into a bowl, cover it so the wrap touches the surface, and chill it for a couple of hours.

Tips I Have Learned Along the Way

  • Whisk constantly while heating to keep the cocoa smooth
  • Always cover the pudding directly to prevent a skin from forming
  • If it does not set, gently reheat and add a little more bloomed gelatin
  • If it gets too thick, stir in a splash of warm cream

Recipes do not have to be perfect to be good. This one is very forgiving.

Description

This keto hot chocolate pudding is rich, creamy, and cozy. An easy low carb dessert made for busy families who want comfort without the sugar.


Ingredients

Scale
  • 2 cups heavy cream, divided
  • 1 ½ teaspoons unflavored gelatin powder
  • ¼ cup powdered keto sweetener
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon sea salt
  • 2 teaspoons vanilla extract


Instructions

  1. Pour ¼ cup of the heavy cream into a small bowl. Sprinkle the gelatin evenly over the top and whisk immediately. Set aside to bloom.
  2. In a medium saucepan over medium low heat, whisk together the remaining cream, sweetener, cocoa powder, and salt. Heat while whisking until smooth and just starting to bubble. Do not boil.
  3. Remove from heat and stir in the vanilla extract.
  4. Whisk in the bloomed gelatin until completely dissolved and smooth.
  5. Pour into a bowl or individual serving dishes.
  6. Serve warm, or cover so plastic wrap touches the surface and refrigerate for at least 2 hours until set. Stir before serving.
