Description

A rich and creamy dairy free keto coconut ice cream made with coconut milk and coconut cream. Smooth, flavorful, and only one net carb per serving.


Ingredients

Scale
  • 1 can full fat coconut milk, 13.66 ounces
  • 1 can coconut cream, 13.66 ounces
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon coconut extract
  • 1 1/2 tablespoons keto honey
  • 20 to 30 drops liquid monk fruit sweetener
  • Optional 1/2 cup raw coconut chips


Instructions

  1. Freeze the ice cream maker bowl according to the manufacturer’s instructions.
  2. Add coconut milk, coconut cream, vanilla extract, coconut extract, and keto honey to a food processor or blender. Blend until smooth.
  3. Add liquid monk fruit sweetener to taste and blend again.
  4. If using coconut chips, pulse briefly until incorporated.
  5. Pour the mixture into the frozen ice cream maker bowl and churn according to your machine’s instructions.
  6. Serve immediately for soft ice cream or transfer to a freezer safe container and freeze until firm.

Notes
