Keto Coconut Ice Cream this sugar

If you love coconut and are looking for an easy frozen dessert that fits a keto or low carb lifestyle, this recipe is a must try. It has a smooth texture, a naturally sweet coconut taste, and only one net carb per serving when made as written.

Why You Will Love This Keto Coconut Ice Cream

This recipe is perfect for anyone who wants homemade ice cream without sugar or complicated steps.

It is made with full fat coconut milk and coconut cream for the creamiest texture possible. There is no refined sugar, no fillers, and no strange aftertaste.

It also works beautifully for people who are dairy free, gluten free, or following a ketogenic way of eating.

Ingredients You Will Need

You will find the exact ingredient quantities in the recipe card at the bottom of this post.

To make this keto coconut ice cream, you will need full fat canned coconut milk, coconut cream, vanilla extract, coconut extract, keto honey, and liquid monk fruit sweetener. Optional coconut chips can be added for extra texture and coconut flavor.

Using canned coconut milk and coconut cream is essential for the correct fat content and creamy consistency.

What Is Keto Coconut Ice Cream

Keto coconut ice cream is a frozen dessert made without dairy or sugar. Instead of heavy cream and milk, it uses coconut milk and coconut cream. Instead of sugar, it uses keto friendly sweeteners that do not spike blood sugar.

The result is a rich and satisfying ice cream that fits perfectly into a low carb or keto diet.

How to Make Keto Coconut Ice Cream

Step One Freeze the Bowl

The day before making the ice cream, freeze the freezer bowl from your ice cream maker until solid.

Step Two Blend the Base

Add coconut milk, coconut cream, vanilla extract, coconut extract, and keto honey to a food processor or blender. Blend until completely smooth.

Add liquid monk fruit sweetener to taste and blend again. If using coconut chips, pulse briefly to mix them in.

Step Three Churn

Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions until thick and creamy.

Step Four Freeze or Serve

For soft serve style ice cream, enjoy immediately. For firmer ice cream, transfer to a freezer safe container and freeze for two to five hours.

Keto Coconut Ice Cream

Is Coconut Milk Keto Friendly

Yes. Unsweetened canned coconut milk is keto friendly. It is high in fat, very low in carbs, and contains little to no sugar.

Be sure to avoid sweetened or carton style coconut milk, which is much higher in carbohydrates.

Tips for the Best Texture

Always use full fat canned coconut milk and coconut cream. Low fat versions will result in icy ice cream.

This ice cream is best enjoyed the day it is made. If frozen solid, let it sit at room temperature for twenty to ninety minutes before scooping.

For quicker softening, microwave in ten second intervals until scoopable.
