Japanese Strawberry Shortcake Recipe

I have a confession. The first time I tried Japanese strawberry shortcake, I expected it to taste like a super sweet American birthday cake.

It did not.

It was light. Airy. Not too sweet. Fresh strawberries actually tasted like strawberries. And the whipped cream felt like a cloud instead of frosting that knocks you out with sugar.

So of course I had to make a Potluck Eats version that fits my Busy Family Standard. Still classic. Still fluffy. Still pretty enough for a celebration. But written and tested like a real life home cook making it on a regular day.

This is the cake I make when I want something that looks fancy but does not require a million complicated steps.

It is also famously called Japanese Christmas cake because the red strawberries and white cream feel festive. But honestly, I would happily eat it in July on a random Tuesday.

What makes it different from American strawberry shortcake

In the U.S., strawberry shortcake is usually biscuits with sweet strawberries and whipped cream.

Japanese strawberry shortcake is a sponge cake. It is soft and bouncy, layered with whipped cream and fresh strawberries. The whole thing is light, not overly sweet, and feels like the dessert version of a deep breath.

Ingredients

I am listing what you need here, but I am not putting amounts in this section.

All quantities are in the recipe card at the bottom of the post so you can scroll, print, and get straight to it.

Cake
Cake flour
Baking powder
Salt
Large eggs
Granulated sugar
Milk
Neutral oil
Vanilla

Filling and topping
Cold heavy whipping cream
Powdered sugar
Vanilla

Strawberries
Fresh strawberries, washed and very thoroughly dried

Optional syrup
Sugar
Warm water

Yes, drying the strawberries matters. If they are wet, they make the cake soggy and the cream slide around. I learned that the messy way.

Equipment I actually use

Two 6 inch cake pans or one 8 inch cake pan
Parchment paper
Stand mixer or hand mixer
Fine mesh sieve for the flour
A serrated knife for slicing layers

If you only have one pan, you can bake in batches. Not glamorous, but it works.

How I make Japanese strawberry shortcake

Step 1 Prep your pans and oven

Heat the oven to 350 degrees F.

Line the bottom of your cake pans with parchment. I do not grease the sides heavily because sponge cake likes something to cling to as it rises.

Step 2 Mix the dry ingredients

Sift the cake flour, baking powder, and salt together. Sifting is not optional for this cake. It keeps the crumb light and helps avoid flour pockets.

Step 3 Whip the egg yolks

Separate the eggs.

Beat the yolks with part of the sugar until pale and thicker. You want it to look lighter in color and fall in ribbons when you lift the whisk.

Mix in milk, oil, and vanilla until smooth.

Step 4 Whip the egg whites

In a clean bowl, beat the egg whites until foamy, then slowly add the remaining sugar.

Beat until you reach firm peaks. The meringue should hold its shape, but the tip can gently fold over.

If you beat it until it looks dry and clumpy, you went too far. The cake can turn dense.

Step 5 Fold, gently, like you mean it

Fold about one third of the egg whites into the yolk mixture to lighten it.

Then fold in the rest in two additions.

I use a big spatula and a gentle scoop and fold motion, rotating the bowl as I go. The goal is fluffy batter, not deflated batter.

Step 6 Bake

Pour into prepared pans and smooth the top.

Tap the pans lightly on the counter to pop big air bubbles.

Bake until the top is lightly golden and a toothpick comes out clean.

Cool in the pan for about 10 minutes, then turn out onto a rack to cool completely.

Do not try to frost warm sponge cake unless you enjoy chaos.

The whipped cream frosting I swear by

Start with cold cream. Like, really cold.

Whip on medium speed, not high. Medium gives you a smoother, fluffier texture that is less likely to turn grainy.

Add powdered sugar and vanilla once it starts to thicken, then whip until you hit medium peaks.

Medium peaks means it holds shape but still looks soft and spreadable.

If you go too far, it turns grainy fast. And there is no un whipping it. Ask me how I know.

If you need the cake to hold up overnight, I recommend stabilized whipped cream. I include that option in the recipe card.

Assembling the cake without losing your mind

step 4 - Japanese Strawberry Shortcake Recipe

Step 1 Slice your sponge

Once completely cool, slice the cake into two layers for an 8 inch cake, or four thin layers if you baked two 6 inch cakes and slice each one.

Use a serrated knife and gentle sawing motion. No pressing down.

Step 2 Optional syrup

A light syrup brushed on the cake layers keeps everything moist. I do this when I know the cake will sit for a few hours before serving.

Step 3 Layer

Put one cake layer on a plate or cake stand.

Spread a layer of whipped cream.

Add sliced strawberries in an even layer.

Add a little more cream to fill gaps.

Top with the next cake layer and repeat.

Step 4 Frost and decorate

Frost the top and sides with whipped cream.

Decorate with whole strawberries.

If you want the classic snowy look, dust with powdered sugar right before serving.

My best Potluck Eats tips

Dry your strawberries really well. This is the biggest difference between a neat cake and a slippery cake.

Do not over whip the egg whites. Firm peaks, not dry peaks.

Fold gently. If you stir hard, you knock out the air and lose that fluffy texture.

Chill the cake before slicing for cleaner pieces. Even 30 minutes in the fridge helps.

If you are serving it later, use stabilized whipped cream. Regular whipped cream is delicate.

How to store it

This cake is best the day it is assembled.

You can store it in the fridge for up to 2 days, but the strawberries will start to soften and release juice.

If you want to prep ahead, bake the sponge cake layers, wrap well, and freeze. Then thaw in the fridge, and assemble the day you plan to serve.

FAQs

How is Japanese strawberry shortcake different from American strawberry shortcake

Japanese strawberry shortcake is sponge cake layered with whipped cream and fresh strawberries. American strawberry shortcake is usually biscuits with sweet strawberries and whipped cream.

Can I use all purpose flour

I do not recommend it. Cake flour gives that soft, pillowy texture. All purpose flour can make it heavier.

Can I make it as a sheet cake

Yes. Bake in a parchment lined 9 by 13 pan, then slice and layer. It will not be as tall, but it is easier for a crowd.

Can I make it the night before

Yes, but use stabilized whipped cream and keep it chilled. It holds up much better.

Description

This Japanese Strawberry Shortcake is light, fluffy, and not too sweet, with tender sponge cake layers, airy whipped cream, and plenty of fresh strawberries. Keep it chilled for the cleanest slices and the prettiest layers.


Ingredients

Scale
  • Sponge cake
  • Cake flour 1 cup 120 grams
  • Baking powder 1 teaspoon
  • Salt 1 quarter teaspoon
  • Large eggs 4, separated
  • Granulated sugar 3 quarters cup 150 grams, divided
  • Milk 3 tablespoons 45 grams
  • Neutral oil 3 tablespoons 40 grams
  • Vanilla extract 1 teaspoon
  • Whipped cream frosting
  • Heavy whipping cream 2 cups 480 grams, cold
  • Powdered sugar 6 tablespoons to 8 tablespoons, to taste
  • Vanilla extract 1 teaspoon
  • Strawberries
  • Fresh strawberries 12 ounces to 16 ounces, washed and very thoroughly dried
  • Optional syrup
  • Sugar 3 tablespoons
  • Warm water 1 third cup
  • Optional stabilized whipped cream option
  • If you want the frosting to hold overnight, add 1 tablespoon instant vanilla pudding mix or 2 teaspoons unflavored gelatin bloomed in 2 tablespoons water and melted, then stream it into cream while whipping to medium peaks.


Instructions

  1. Heat oven to 350 degrees F. Line cake pans with parchment on the bottom.
  2. Sift cake flour, baking powder, and salt together.
  3. Beat egg yolks with half the sugar until pale and thick. Mix in milk, oil, and vanilla.
  4. In a clean bowl, beat egg whites until foamy, then gradually add remaining sugar. Beat to firm peaks.
  5. Fold one third of egg whites into yolk mixture. Fold in remaining whites gently.
  6. Sift dry ingredients over the batter and fold gently until just combined.
  7. Divide batter into pans. Tap pans lightly to release big bubbles.
  8. Bake until lightly golden and toothpick comes out clean, about 15 to 18 minutes for two 6 inch pans or 23 to 25 minutes for one 8 inch pan.
  9. Cool 10 minutes, then remove from pans and cool completely on a rack.
  10. Make syrup if using by dissolving sugar in warm water. Cool.
  11. Whip cold cream on medium speed until it thickens. Add powdered sugar and vanilla. Whip to medium peaks.
  12. Slice cake into layers. Brush with syrup if using.
  13. Layer cake with whipped cream and sliced strawberries. Frost top and sides. Decorate with whole strawberries.
  14. Chill 30 minutes before slicing for cleaner pieces. Serve.

Notes

Storage: Refrigerate up to 2 days. Best on day one. For make ahead, freeze cake layers and assemble the day of serving.
