 2 pounds russet potatoes
 2 stalks celery, thinly sliced
 2 hard-boiled eggs
 ¼ cup chopped yellow onion
 ¼ cup chopped sweet pickle or pickle relish
 1 teaspoon salt
 1 cup mayonnaise

Give those potatoes a good wash to get rid of any dirt. Toss them into a big pot – keep 'em whole for now. Pour in enough water to completely cover the potatoes, plus about an extra inch.

Bring the water to a boil over medium-high heat and let the potatoes cook for around 30 minutes. To check if they're done, poke one with a fork. If the fork slides in easily, they're ready. If not, give them another five minutes and try again.
