If you need an easy crowd pleasing dish that tastes like summer, this hawaiian tortellini pasta salad is one of my favorite recipes to make. It is creamy, colorful, a little sweet, a little savory, and it always disappears fast at gatherings.

Ingredients You Will Need

Pasta

Cheese tortellini, fresh or frozen

Mix Ins

Diced ham
Pineapple tidbits with juice
Orange bell peppers
English cucumber
Red onion
Cherry tomatoes

Creamy Pineapple Dressing

Mayonnaise
Sour cream or Greek yogurt
Pineapple juice from the can
Dijon mustard

Helpful Ingredient Tips From My Kitchen

Tortellini
I usually grab frozen tortellini because it is affordable and easy to keep on hand. Just cook it to al dente so it stays firm after chilling.

Ham
Thick sliced deli ham works great. Leftover holiday ham is even better. I have even used pan fried spam before and my family loved it.

Pineapple
Use tidbits, not big chunks. They mix better so you get pineapple in every bite. Do not forget to save the juice for the dressing.

Veggies
Try to chop everything about the same size. It makes the salad easier to eat and look prettier on the table.

Easy swaps
No sour cream. Use Greek yogurt.
Want it sweeter. Add a little honey.
Want it lighter. Use a simple vinaigrette.

How I Make Hawaiian Tortellini Pasta Salad

1. Cook the tortellini

Boil in salted water according to the package directions. Drain and let cool.

Dice the ham and vegetables into bite size pieces.

Mix the salad with only half the dressing.
Store the rest of the dressing separately in the fridge.

Description

This Hawaiian Tortellini Pasta Salad is a quick, colorful, and crowd pleasing dish packed with cheese tortellini, fresh vegetables, savory ham, and sweet pineapple tossed in a creamy tropical dressing. Perfect for potlucks, barbecues, and easy make ahead meals.


Ingredients

Scale
  • 19 ounces cheese tortellini, fresh or frozen
  • 2 orange bell peppers, cut into bite size pieces
  • 1 English cucumber, sliced
  • 1 half medium red onion, thinly sliced
  • 16 ounces cherry tomatoes, halved
  • 2 and a half cups diced ham
  • 14 ounces pineapple tidbits, juice reserved
  • 1 half cup mayonnaise
  • 1 half cup sour cream or Greek yogurt
  • 1 half cup pineapple juice
  • 1 tablespoon sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic paste
  • 2 teaspoons ginger paste
  • 1 teaspoon black pepper


Instructions

  1. Cook tortellini in salted water according to package directions. Drain and cool.
  2. Chop ham and vegetables.
  3. Add all salad ingredients to a large bowl.
  4. Add dressing ingredients to a jar. Shake until smooth.
  5. Pour dressing over salad and gently toss to coat.
  6. Chill for 1 hour if desired. Serve cold.

Notes

For make ahead, use half the dressing and save the rest for later. Salad keeps in the fridge up to 3 days. Add extra dressing before serving if needed.
