It started one evening when I wanted something fresh and light for dinner but still filling enough that nobody would be looking for snacks an hour later. I had a package of cheese tortellini in the fridge and a bowl of cucumbers and tomatoes on the counter, and the idea just clicked.

I tossed everything together with feta cheese, olives, and a quick homemade Greek dressing. The result was bright, fresh, and packed with flavor. My family finished the bowl faster than I expected, and it has been on repeat ever since.

How I Make Greek Tortellini Pasta Salad

Step 1 Cook the Tortellini

Bring a large pot of salted water to a boil.

Cook the tortellini according to the package instructions until tender.

Drain the pasta and rinse it under cold water so the salad stays fresh and cool.

Step 2 Prepare the Salad Base

Place the cooled tortellini in a large mixing bowl.

  • Cherry tomatoes
  • Chopped cucumber
  • Kalamata olives
  • Red onion
  • Crumbled feta cheese

Gently toss everything together.

Description

This Greek tortellini pasta salad is a fresh and flavorful dish made with cheese tortellini, crisp vegetables, briny olives, and creamy feta tossed in a simple homemade Greek dressing. It is quick to prepare and perfect for potlucks, picnics, or an easy make ahead side dish.


Ingredients

Scale
  • 20 ounces cheese tortellini
  • 1 ½ cups grape or cherry tomatoes halved
  • 1 large cucumber chopped
  • 1 cup Kalamata olives chopped
  • ½ red onion chopped
  • ¾ cup crumbled feta cheese
  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 garlic clove minced
  • ½ teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
