- 1 cup finely crumbled granola
- ¾ cup all-purpose flour
- ½ teaspoon kosher salt
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ cup unsalted butter, softened
- ½ cup packed light brown sugar
- ¼ cup white sugar
- 1 large egg
- ¾ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ½ cup rolled oats
- Optional: ½ cup chocolate chips, raisins, or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk flour, salt, baking powder, and baking soda in a bowl.
- Cream butter, brown sugar, and sugar in another bowl until fluffy. Beat in egg, vanilla, and cinnamon.
- Fold dry ingredients into wet mixture until just combined.
- Stir in granola, oats, and any optional add-ins.
- Drop tablespoonfuls of dough onto the baking sheet, spaced apart.
- Bake 13-15 minutes until edges are golden. Cool on the baking sheet for 10 minutes, then transfer to a wire rack.
Notes
Use your favorite granola: nutty, fruity, or chocolate all work. For extra chewy cookies, don’t overbake. Store in an airtight container for up to 5 days.
