Flourless Banana Protein Muffins Recipe

Published: Jan 1, 2026 by Betsy · This post may contain affiliate links · Leave a Comment

These flourless banana protein muffins are one of those recipes I make when I see spotty bananas on the counter and know the week ahead is going to be busy.

I wanted something that felt like banana bread, but lighter, higher in protein, and easy enough to throw together without pulling out half the kitchen.

Flourless Banana Protein Muffins this sugar

Because they are flourless, these muffins rely on oats, Greek yogurt, and protein powder to create a soft, satisfying texture that still feels like a treat.

They come together in the blender, bake quickly, and are perfect for grab-and-go breakfasts, lunchboxes, or afternoon snacks for kids and adults alike.

Expert Tips for Success

Use very ripe bananas. The riper they are, the sweeter and more moist your flourless banana protein muffins will be.
Add wet ingredients to the blender first. This helps everything blend smoothly and prevents the blades from overheating.
Blend only until smooth. Overblending can warm the batter and affect texture.
Use fresh baking powder and baking soda. These muffins are flourless, so proper rise depends on active leavening agents.
Let muffins cool before removing them from the pan so they set properly.

Ingredients with Substitutions

Greek yogurt
Adds protein and moisture. Any fat percentage works. A thick dairy-free yogurt may work, but texture can vary.

Bananas
Use ripe, spotty bananas for best flavor and natural sweetness.

Eggs
Provide structure and lift. This recipe has not been tested egg-free.

Rolled oats
Used instead of flour. Quick oats should also work, but rolled oats give the best texture.

Protein powder
Vanilla or unflavoured protein powder both work. If omitting, substitute with additional oats or almond flour.

Maple syrup
Adds gentle sweetness. Honey can be used instead.

Vanilla extract
Enhances flavor without added sugar.

Baking powder and baking soda
Both are essential for rise in flourless banana protein muffins.

Salt
Balances sweetness and brings out flavor.

Chocolate chips
Optional but kid-approved. Mini chips distribute best.

Step-by-Step Instructions

Preheat the oven to 400 degrees Fahrenheit and prepare a 12-cavity muffin tray, preferably silicone or well-greased.

Add Greek yogurt, bananas, eggs, vanilla extract, and maple syrup to a high-powered blender.

Flourless Banana Protein Muffins

Add oats, protein powder, baking powder, baking soda, and salt. Blend until smooth, about 2 to 3 minutes.

Flourless Banana Protein Muffins

Divide the batter evenly between muffin cavities. If using chocolate chips, sprinkle them on top and gently stir into each muffin.

Flourless Banana Protein Muffins

Bake for 15 to 20 minutes, until muffins are set and a toothpick inserted in the center comes out clean.

Allow muffins to cool slightly before serving.

How to Serve and Store

Serve flourless banana protein muffins warm or at room temperature as a quick breakfast, snack, or lunchbox addition. They pair well with yogurt, fruit, or a glass of milk.

Store muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 7 days.

For longer storage, freeze muffins in a freezer-safe bag with parchment paper between layers for up to 3 months. Thaw overnight or reheat gently in the microwave.

Frequently Asked Questions

Can I make these muffins gluten free

Yes. These muffins are naturally gluten free when made with certified gluten-free oats.

Can I replace the protein powder

Yes. Use an additional half cup of oats or almond flour if omitting protein powder.

Can I use collagen instead of protein powder

Collagen can be used, but it will not provide the same structure as protein powder. Expect a softer muffin.

Can I make these dairy free

A thick dairy-free yogurt may work, but results can vary and have not been fully tested.
