  • 1 teaspoon vanilla extract or paste (4 g)
  • ½ teaspoon red gel food coloring (or 1 tablespoon liquid)

Vanilla Buttercream

  • ½ cup unsalted butter, room temp (113 g)
  • 1 teaspoon vanilla extract or paste (4 g)
  • ¼ teaspoon salt (2 g)
  • 2 cups powdered sugar (250 g)
  • 2 tablespoon heavy cream, room temp (30 g)

Edible Blood

  • ⅓ cup seedless raspberry or strawberry jam (95 g)
  • 2 tablespoon water (30 g)
  • ¼ teaspoon red gel food coloring (optional)

Decorations

  • ⅓ cup white fondant
  • 2 tablespoon black fondant
  • Gel food coloring (blue, green, purple)
  • Clear alcohol or extract (vodka, rum, almond, or lemon)
  • Small paintbrush

Step-by-Step Instructions

Make the Fondant Irises

Knead white fondant until soft, roll thin, and cut out 12 circles (about 1 inch wide).
Mix gel food coloring with a splash of clear alcohol or extract. Paint each white circle with your chosen iris color.
Roll black fondant and cut 12 small pupils. Place in the center of each iris. Drag the paintbrush from pupil outward to create streaky lines. Let dry.

Bake the Red Velvet Cupcakes

  • 1 tsp vanilla extract or paste (4 g)
  • ½ tsp red gel food coloring or 1 Tbsp liquid
  • ½ cup unsalted butter, room temp (113 g)
  • 1 tsp vanilla extract or paste (4 g)
  • ¼ tsp fine salt (2 g)
  • 2 cups powdered sugar (250 g)
  • 2 Tbsp heavy cream, room temp (30 g)
  • ⅓ cup seedless raspberry or strawberry jam (95 g)

  • About ⅓ cup white fondant

Instructions

  1. Roll out white fondant to about ⅛ inch thick. Cut 12 circles about 1 inch wide. Mix gel color with a splash of clear alcohol or extract and paint each disc. Add a small black fondant pupil in the center and streak outward with a brush for an iris effect. Let dry.
  2. Preheat oven to 350°F or 175°C. Line a muffin tin with 12 liners. Whisk flour, cocoa, baking powder, and salt. Cream butter and sugar until pale. Beat in eggs. Add buttermilk, oil, vanilla, and red color. Mix in dry ingredients just until combined. Divide batter evenly and bake 17 to 20 minutes. Cool completely.
  3. Beat butter until smooth. Add vanilla and salt. Mix in powdered sugar on low speed, adding cream halfway through. Beat until fluffy. Pipe a smooth dome on each cupcake with a large round tip. Press in a fondant iris and chill briefly.
  4. Whisk jam with water and add red gel color if needed. Transfer to a small piping bag and pipe thin veins upward from the base toward the iris. Serve chilled or at room temperature.

Notes

Let the fondant irises dry while the cupcakes bake. Chill cupcakes after frosting to help the blood veins set cleanly. Use candy eyes as a simple shortcut if you prefer not to make fondant irises.
