You're basically taking a simple strawberry cupcake and topping it with a pink, berry-kissed buttercream that pipes into brainy squiggles in minutes. Then a quick drizzle of strawberry syrup gives you that fresh-from-the-apocalypse look without any fancy skills.

For the Strawberry Cupcakes

  • 1 box strawberry cake mix, 15.25 ounces
  • Oil, eggs, and water as listed on your box
  • 24 cupcake liners

Swap the mix for your favorite strawberry cupcake batter. You will want about 24 standard cupcakes, fully cooled before decorating.

For The Strawberry Brain Buttercream

  • 1 cup unsalted butter, softened
  • 1⁄2 cup strawberry jam or preserves, room temperature and well stirred
  • 4 cups powdered sugar, sifted for the smoothest texture
  • 1⁄2 teaspoon pure vanilla extract
  • Pinch of fine sea salt

  • 1⁄4 cup strawberry syrup, or warm 3 tablespoons strawberry jam with 1 tablespoon water until pourable

  • 2 standard 12-cup muffin pans
  • Paper liners
  • Cooling racks
  • Stand mixer with paddle or a hand mixer
  • Offset spatula or butter knife
  • Piping bags, disposable or reusable

Step-By-Step: How To Pipe Realistic "Brains"

1. Bake And Cool

Line pans, fill each well about two thirds, and bake using your mix or recipe directions. Move cupcakes to a wire rack and cool completely. Warm cupcakes will melt buttercream and smudge the pattern.

2. Make The Buttercream

Beat softened butter on medium until fluffy and light, about 2 minutes. Add jam and beat until fully blended. Scrape the bowl. Gradually add powdered sugar while mixing on low so it does not puff everywhere. Add vanilla and a pinch of salt. Beat on medium until smooth and creamy, 1 to 2 minutes more. 3. Crumb Coat The Tops

4. Pipe The Brain Pattern

Fit a piping bag with a small round tip. Fill with frosting and twist the top closed.

  • Pipe a short curved line down the center of the cupcake to form the "central sulcus." Think of a soft S or a lazy L shape.
  • On the left side of that line, pipe tight squiggles from top to bottom to fill the half.
  • Repeat on the right side.
  • Vary the squiggle size a little so it looks organic. No two brains should match and that is the point.

5. Add The Bloody Finish

Set cupcakes on a rimmed tray. Drizzle strawberry syrup lightly over the tops, letting a few drops pool on the platter. If you want extra shine, warm the syrup 10 seconds in the microwave so it flows in thin ribbons.

    Decorated cupcakes keep up to 3 days in an airtight container in the fridge. Drizzle the syrup right before serving for the glossiest look. Let cupcakes stand 20 to 30 minutes at room temp before eating for the best texture.
  • Freezing
    Unfrosted cupcakes freeze well up to 2 months. Thaw in the fridge overnight. Frost after thawing.
  • Transport
    Use a cupcake carrier. If you do not have one, place cupcakes in a snug box and stick a little frosting on the bottom of each liner to anchor it to the board. Bring and add the syrup once you arrive.
