These Crockpot Birria Tacos are bold, cozy, crispy, cheesy, and surprisingly easy to pull off. The beef slow cooks all day while you work, run errands, or manage the chaos of real life. Then at dinner, you crisp up the tacos and serve them with that rich dipping sauce everyone loves.

Beef Chuck Roast

This is my go to cut. It gets fall apart tender after 8 hours on low. You can also use pork shoulder if you want to switch things up.

Dried Red Chiles

Guajillo chiles are perfect for mild to moderate heat. If you want less spice, remove all the seeds and use fewer chiles.

Chipotle in Adobo

Adds smoky flavor. One or two is plenty. Trust me.

Jarred Salsa

Yes, we are using a shortcut. This keeps things realistic for busy cooks and still delivers big flavor.

Corn Tortillas

White corn tortillas crisp up beautifully and feel the most traditional.

How To Make Crockpot Birria Tacos

I like to think of this in two stages.

Step 1 Make the Birria Beef

  1. Season the chuck roast with salt and pepper.
  2. Sear it in a hot skillet for about 5 minutes per side. This builds flavor.
  3. Add the roast to your crockpot.
  4. Top with dried chiles, salsa, beef broth, chipotle, and spices.
  5. Cook on low for 8 hours or high for 5 to 6 hours.

When it is done, the beef should shred easily with a fork.

Remove the beef and shred it on a sheet pan.

Stir tomato paste and apple cider vinegar into the cooking liquid. Blend it right in the crockpot with an immersion blender until smooth. This becomes your dipping sauce.

Pour about 1 cup of that sauce over the shredded beef and toss it together.

Now you are ready for tacos.

How To Make Crispy Quesabirria Tacos

Heat a large skillet or griddle over high heat.

  1. Lay the tortillas flat.
  2. Add shredded cheese.
  3. Add about 2 ounces of shredded birria beef.
  4. Sprinkle diced onion and cilantro.
  5. Heat for 2 minutes.
  6. Fold and cook 3 to 5 minutes per side until crispy.

If you love extra crispy edges, leave them on a little longer.

Serve with small bowls of warm consomme for dipping. Add a squeeze of fresh lime. That first bite is magic.

How I Serve These For My Family

When I make Crockpot Birria Tacos, I usually stand at the stove and cook 4 to 6 at a time while everyone gathers around.

It feels fun and casual. A little interactive.

If you prefer to sit down all at once, you can keep finished tacos warm in a 200 degree oven on a baking sheet until ready to serve.

Dinner is handled. Slow cooker for the win. These Crockpot Birria Tacos are packed with bold flavor, tender shredded beef, melty cheese, and plenty of rich sauce for dipping.


Ingredients

Scale

For the Birria Beef

  • 1 boneless beef chuck roast, 2.5 to 3 pounds
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 6 to 10 dried red chiles, seeds removed
  • 1 16 ounce jar mild to medium salsa
  • 4 cups beef broth
  • 1 to 2 chipotle peppers in adobo
  • 1 tablespoon garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar

For the Tacos

  • 20 to 30 small corn tortillas
  • 1 to 2 cups shredded Mexican blend or Oaxaca cheese
  • ½ white onion, diced
  • Fresh cilantro
  • Lime wedges


Instructions

  1. Season and sear the roast on both sides.
  2. Add roast to crockpot with chiles, salsa, broth, chipotle, and spices.
  3. Cook on low 8 hours or high 5 to 6 hours.
  4. Remove and shred beef.
  5. Blend cooking liquid with tomato paste and vinegar until smooth.
  6. Toss 1 cup sauce with shredded beef.
  7. Heat tortillas, add cheese and beef, fold and cook until crispy.
  8. Serve with warm dipping sauce.

Notes

For extra richness, dip tortillas into the sauce before crisping. Adjust chipotle peppers to control the spice level. Cooking time may vary slightly depending on roast size.
