Ingredients for One-Pan Roasted Chicken and Vegetables

 1 pound red potatoes
 1 cup chopped carrots
 1 cup radishes, halved
 4 teaspoon minced garlic
 2 teaspoon lemon zest
 2 tablespoon lemon juice
 1 large lemon or two small lemons, sliced
 1 small sprig fresh rosemary, roughly chopped
 2 tablespoon chopped fresh parsley
 2 tablespoon olive oil
 1 tablespoon butter, softened
 Salt, to taste
 Ground black pepper
 2 ½ pounds chicken leg quarters
 ½ cup chopped yellow onion or chopped shallots

Preheat your oven to 425°F (220°C).

In a large bowl, combine the cut red potatoes, chopped carrots, halved radishes, minced garlic, lemon zest, lemon juice, lemon slices, chopped rosemary, and parsley (if using).

Drizzle the olive oil over the vegetables and toss everything together until they are evenly coated. Season with salt and pepper to taste.

Remove the baking pan from the oven and carefully remove the foil. Place the seasoned chicken directly on top of the roasted vegetables, skin side up.
