If you love bold taco flavors but do not have hours to simmer beef all day, these Chicken Birria Tacos are about to become your new favorite dinner.

I discovered this shortcut on one of those nights when I had zero plan and very little energy. I had shredded rotisserie chicken in the fridge and thought… what if I turned this into birria style tacos?

Best decision ever.

They are crispy on the outside, cheesy in the middle, and full of smoky flavor. And the best part? Dinner is on the table in about 20 minutes.

That is my kind of recipe.

What Are Chicken Birria Tacos?

Traditional birria is a slow cooked Mexican stew made with beef, goat, or lamb and served with a rich dipping broth.

Chicken Birria Tacos are a quicker twist. Instead of slow cooking meat all day, we use shredded chicken and simmer it in a flavorful sauce. Then we dip tortillas in that sauce, stuff them with chicken and cheese, and crisp them in a skillet.

You still get that juicy, dunkable taco experience. Just faster.

Ingredients

Full ingredient measurements are in the recipe card at the end of this post.

Here is what you will need.

Rotisserie chicken
Chili powder
Smoked paprika
Ground cumin
Shredded Mexican cheese
Corn tortillas
Vegetable oil

For the sauce
Red enchilada sauce
Regular Coke or Dr Pepper
Brown sugar
Garlic powder
Cornstarch
Water

Simple pantry ingredients. Nothing complicated.

How to Make Chicken Birria Tacos

This comes together so quickly.

Step 1
Shred your rotisserie chicken if it is not already shredded.

Step 2
Toss the chicken with chili powder, smoked paprika, and cumin.

Make the sauce by simmering enchilada sauce, soda, brown sugar, and garlic powder. Stir in a cornstarch slurry and cook until slightly thickened.

Pour the sauce over the chicken and let it simmer together for a few minutes so everything is coated and flavorful.

Heat a skillet with a little oil and a spoonful of sauce.

Dip a tortilla lightly in the sauce, place it in the pan, add chicken and cheese, fold it over, and cook until golden and crispy on both sides.

That crispy outside with melty cheese inside? So good.

Tips for Crispy Chicken Birria Tacos

Warm the tortillas in the microwave for 15 seconds before dipping. They will bend without cracking.

Use a cast iron skillet if you have one. It gives the best crisp.

Do not skip adding a little sauce to the pan. That is where the color and flavor come from.

Save extra sauce for dipping. My family always asks for more.

What to Serve With Chicken Birria Tacos

At my house we usually keep it simple.

Spanish rice
Black beans
Fresh pico de gallo
Guacamole
Simple green salad

This is a great meal for taco night or casual weekend dinners.

Can I Make These Ahead?

The chicken mixture can be made 2 to 3 days in advance and stored in the refrigerator.

I recommend frying and assembling the tacos fresh. That is how you get the crispy texture.

Leftover chicken also works great in quesadillas or over rice for lunch the next day.

Description

These Chicken Birria Tacos are crispy, cheesy, and packed with bold flavor. Made with shredded rotisserie chicken tossed in warm spices and simmered in a sweet and savory enchilada sauce, they come together fast and are perfect for dipping.


Ingredients

Scale
  • 1 rotisserie chicken, shredded
  • 1 tablespoon chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 2 cups shredded Mexican cheese
  • 12 corn tortillas
  • Vegetable oil
  • 1 can red enchilada sauce, 10 ounces
  • 1 cup regular Coke or Dr Pepper
  • ½ cup brown sugar, adjust to taste
  • ½ teaspoon garlic powder
  • 1 teaspoon cornstarch
  • 1 teaspoon water


Instructions

  1. Toss shredded chicken with chili powder, smoked paprika, and cumin.
  2. In a saucepan, combine enchilada sauce, soda, brown sugar, and garlic powder. Bring to a gentle boil.
  3. Mix cornstarch and water together. Stir into sauce and simmer 5 minutes until slightly thickened.
  4. Pour sauce over chicken and toss to coat.
  5. Heat a skillet over medium heat. Add a little oil and a spoonful of sauce.
  6. Dip tortilla in sauce and place in skillet.
  7. Add chicken and cheese, fold in half, and cook until crispy on both sides.
  8. Serve with extra sauce for dipping.

Notes

Start with less brown sugar and taste as you go. Some enchilada sauces are more bitter than others. Warm tortillas before dipping to prevent tearing. For a less sweet version, reduce the brown sugar and add a squeeze of lime.
