If you have been around Potluck Eats for a while, you already know I love a recipe that saves dinner when the day gets away from us.

This chicharron verde taco is exactly that kind of meal.

It is warm. It is saucy. It is filling. And it comes together in about 30 minutes without turning your kitchen upside down.

I know how it feels at 5 pm when everyone is hungry and you are tired. That is why this chicharron verde taco has earned a permanent spot in my weeknight rotation.

And if you love our Chicharron Tacos Easy 30 Minute Dinner or the Pork Belly Chicharron Tacos, this one is going to feel like an old friend with a bright green twist.

Why This Recipe Fits the Potluck Eats Kitchen

Here is my rule.

If I cannot make it after a long day, it does not go on the site.

This chicharron verde taco checks every box:

  • Simple ingredients
  • One skillet
  • Big flavor
  • Family approved
  • Leftovers that taste even better

No complicated steps. No specialty equipment. Just real food for real life.

Ingredients You Will Need

Quantities are listed in the recipe card below.

For this chicharron verde taco, you need:

  • Chicharrones with meat attached
  • Salsa verde
  • Onion
  • Serrano pepper
  • Chicken broth
  • Oil or pork lard
  • Salt and pepper
  • Corn tortillas for serving

That is it.

I usually grab my chicharrones from a local Mexican market. Look for thicker pieces with some meat on them. The super light, airy snack kind will disappear too fast in the sauce.

How I Make This Chicharron Verde Taco

This is the kind of recipe I make when I do not want to think too hard.

Step 1 Cook the Aromatics

I heat a little oil in a skillet and toss in diced onion and sliced serrano.

Cook for about 3 to 4 minutes until softened and fragrant. Your kitchen will already smell amazing.

Step 2 Add the Salsa

Pour in the salsa verde and chicken broth.

Give it a stir and let it come to a gentle simmer. Taste it. Adjust the salt if needed.

Every salsa is a little different, so trust your taste buds.

Step 3 Add the Chicharrones

Fold in the chicharrones and make sure they are fully coated in that bright green sauce.

This is where the magic starts.

Step 4 Simmer and Soften

Lower the heat, cover, and let it cook for about 10 to 15 minutes.

The chicharrones soften and soak up all that flavor. If they are extra thick, give them a few more minutes.

That is it. Dinner is basically done.

How We Serve It at Home

Most nights, I keep it simple.

  • Warm corn tortillas
  • A big spoonful of chicharron verde
  • Fresh cilantro
  • Diced onion
  • Avocado slices

If I need to stretch it, I add rice and beans on the side.

And if there are leftovers, I scramble a couple of eggs the next morning and spoon the chicharron verde right on top. So good.

Betsy's Busy Family Tips

Because I know we are juggling a lot.

  • Use store bought salsa verde to save time
  • Warm tortillas in a dry skillet for 30 seconds per side
  • Double the batch and refrigerate up to 3 days
  • Add a squeeze of lime at the end to brighten the flavor

If the sauce gets too thick, just add a splash of water or broth. No stress.

Cooking should feel doable, not overwhelming.

Frequently Asked Questions

Is this chicharron verde taco spicy

It can be. If you are cooking for kids, skip the extra chile and use a mild salsa verde.

Can I make it ahead

Yes. It reheats beautifully and tastes even better the next day.

What tortillas work best

Corn tortillas are my go to. They hold up well and give that authentic flavor.

Why I Love Sharing Recipes Like This

I grew up in a kitchen where food meant comfort and connection. Not perfection.

Some nights were big holiday spreads. Other nights were quick skillet meals that came together fast but still brought everyone to the table.

This chicharron verde taco reminds me that simple food can still feel special.

And that is what Potluck Eats is all about.

Reliable recipes. Everyday ingredients. Meals that work for real families.

Description

These Chicharron Verde Tacos are bold, comforting, and packed with authentic flavor. Tender chicharrones simmered in salsa verde with onions and chiles create a rich, savory filling that is perfect tucked into warm corn tortillas for an easy weeknight meal.

Ingredients

Scale
  • 1 ½ tablespoons oil or pork lard
  • ½ cup diced onion
  • 1 serrano pepper, sliced
  • 2 to 3 chile de arbol, optional
  • 1 ½ cups salsa verde
  • 1 cup chicken broth or water with 1 teaspoon chicken bouillon
  • 11 ounces chicharrones with meat attached
  • Salt and pepper to taste
  • Corn tortillas for serving

Instructions

  1. Heat oil in a skillet over medium heat. Add onion and peppers. Cook 3 to 4 minutes.
  2. Stir in salsa verde and broth. Bring to a simmer and adjust salt.
  3. Add chicharrones and coat well in sauce.
  4. Reduce heat, cover, and cook 10 to 15 minutes until softened.
  5. Serve in warm tortillas with your favorite toppings.

Notes

For extra heat, leave the seeds in the serrano and chile de arbol. If the sauce thickens too much, add a splash of broth or water. Serve with chopped cilantro, diced onion, and a squeeze of fresh lime for the best flavor.
