If you have a bag of pork rinds in your pantry and no dinner plan, you are about to feel very relieved.

These chicharron tacos are one of those back pocket meals I pull out when the day gets away from me. They are fast. They are affordable. And somehow they still taste like you planned ahead.

Crispy pork rinds simmer in salsa until tender, then get tucked into warm tortillas with whatever toppings you have in the fridge. That is it. Nothing complicated. Just real food that works on a busy weeknight.

And yes, my family gets excited when I say we are having tacos. Every single time.

What Are Chicharron Tacos

Chicharron tacos are made with chicharrones, which are fried pork skins. Some are light and puffy like chips. Others have little bits of meat attached. Either kind works for this recipe.

I simmer them in salsa so they soften and soak up all that flavor. Once they are tender, they go straight into warm corn tortillas.

It might sound simple. That is because it is. And simple is exactly what we need most nights.

  • 2 cups salsa
  • 1 cup broth or water
  • 5 ounces plain chicharrones
  • Corn tortillas

How I Make Chicharron Tacos

Step 1 Cook the Onion

Heat the oil in a skillet over medium low heat. Add the chopped onion and cook until soft and translucent, about 2 minutes.

Stir in the flour and cook for another 2 minutes. Let it turn lightly golden. This helps thicken the sauce and keeps it from tasting raw.

Step 4 Add the Chicharrones
