Hi friends, it is Betsy
If you need a breakfast that feels special but takes almost no effort, this chicharron and egg taco is about to become your new favorite.
This is the kind of meal I make when mornings feel rushed but I still want something warm and filling. Crispy chicharron. Soft eggs. Warm tortilla. That combination just works every single time.
It is simple. It is comforting. And it comes together fast.

This recipe checks all the boxes.

I have even made this on busy weeknights when nobody felt like cooking a big meal. Tacos save the day again.
What Is a Chicharron and Egg Taco
A chicharron and egg taco is exactly what it sounds like. Crispy pork mixed with eggs and tucked into a warm tortilla.
Some people use crispy pork rinds. Others use leftover carnitas. I usually go with chopped cooked pork or thick style chicharron from the store.
The magic is in cooking the pork first so it gets golden and a little crispy before adding the eggs.
That texture contrast makes all the difference.
Ingredients You Will Need
4 large eggs
1 cup chopped chicharron or cooked pork
1 tablespoon oil
Salt to taste
4 corn or flour tortillas
Optional toppings
Salsa
Avocado slices
Cilantro
Shredded cheese
That is it. Nothing complicated.
How I Make Chicharron and Egg Tacos
Step 1 Cook the Chicharron
Heat oil in a skillet over medium heat.
Add the chopped chicharron and cook for about 3 to 4 minutes until it starts to crisp up. If you are using already crispy pork rinds, you only need a quick warm up.

You want golden edges and lots of flavor.

Step 2 Add the Eggs
Crack the eggs right into the pan.
I gently scramble everything together so the eggs wrap around the pork pieces. Cook until the eggs are just set. Do not overcook. Soft eggs are key.

Season with salt.
Step 3 Warm the Tortillas
Heat tortillas in a dry skillet or directly over a flame for a few seconds per side.
Warm tortillas make better tacos. Always.

Step 4 Build Your Taco
Spoon the chicharron and egg mixture into the tortilla.
Add salsa, avocado, or cheese if you like.
Take a bite while it is still warm.
It is simple food. But it feels like comfort.

Make It Your Own
That is what I love about this chicharron and egg taco. You can adjust it to your family.
Want it spicy
Add jalapenos or hot sauce.
Need it heartier
Add refried beans inside the tortilla.
Feeding picky eaters
Keep it simple with just eggs and pork.
No stress cooking. That is the goal.
Storage and Reheating
The egg mixture is best fresh, but you can store leftovers in the fridge for up to 2 days.
Reheat gently in a skillet. Add a tiny splash of water if needed.
I do not recommend freezing because eggs change texture.
