Traditionally, birria is made with goat or lamb. I use beef chuck roast because it is easy to find, affordable compared to other cuts, and perfect for slow cooking.

Beef chuck roast
Salt
Black pepper
White onion
Garlic
Beef broth
Tomato paste
Chipotle pepper in adobo
Chili powder

How to Make Birria Taco Meat
This is my kind of recipe. Easy steps. Big payoff.
Step 1
Pat the chuck roast dry and season it all over with salt and pepper.
Step 2
Place the roast into your slow cooker.
Step 3
Add chopped onion, garlic, beef broth, tomato paste, diced chipotle pepper, and all the spices. Toss in the bay leaves.

Step 4
Cover and cook on low for 6 to 8 hours. If you are short on time, cook on high for 4 to 5 hours. The meat should shred easily with a fork.
Step 5
Remove the bay leaves and shred the beef directly in the slow cooker. Let it soak in that flavorful broth.

How I Turn It Into Crispy Tacos
This is the fun part.
I ladle some of the broth into a bowl.
I dip a corn tortilla lightly into the broth.
I place it in a hot skillet.
I sprinkle shredded cheese on one side.
I add some of the Birria Taco Meat.
I fold it over and cook until golden and crispy on both sides.
Serve with diced onion, fresh cilantro, lime wedges, and a little bowl of broth for dipping.

If beef prices are high, pork shoulder works beautifully.
