- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a muffin tin with liners. Lightly spray liners.
- In a large bowl, whisk together bananas, Greek yogurt, eggs, honey, and vanilla.
- Add oat flour, protein powder, baking powder, cinnamon, and salt. Stir until just combined.
- Fold in optional mix-ins.
- Divide batter evenly into muffin liners.
- Bake for 18 to 22 minutes until a toothpick comes out clean.
- Cool completely before serving.
Notes
Use very ripe bananas for best flavor. Avoid overbaking and allow muffins to fully cool to set. Store in the fridge or freezer for easy meal prep snacks.
