I was looking all over for a banana chocolate chip protein muffin and I'm gluten intolerant so oat flour would have been fine except I didn't have any and it's blizzarding. So I used regular gluten-free flour and ended up having to add 10 tablespoons of milk to get it to a consistency that you could possibly put in a muffin cup. They are in the oven now and I'm assuming it's going to take longer than 15 minutes to cook since they've got so much milk in them. Does oat flour really need that less moisture?
