If you ask me, asparagus tortellini pasta salad is one of those dishes that just feels like warm weather. It is fresh, colorful, and easy enough to throw together when the day gets busy.

This is exactly the kind of recipe I share here on Potluck Eats. Simple ingredients. No complicated steps. Big flavor. It works for family dinners, cookouts, church potlucks, and those last minute "bring a side" texts we all get.

Cheese tortellini, refrigerated or fresh

Ingredient Tips From My Kitchen

Tortellini
Refrigerated tortellini cooks fast and has great texture. Do not overcook it. Slightly firm is perfect for pasta salad.

Asparagus
Look for bright green stalks that feel firm, not limp. Thinner stalks are more tender.

Blanching tip
A quick boil then ice bath keeps asparagus crisp and bright green. Totally worth the extra step.

Feta
Buy a block and crumble it yourself if you can. The flavor is better and creamier.

Dressing
I love a creamy balsamic vinaigrette here, but any balsamic you enjoy will work.

How I Make Asparagus Tortellini Pasta Salad

1. Cook the tortellini

Boil according to package directions. Drain and rinse with cool water.

2. Blanch the asparagus

Boil for 2 to 3 minutes until just tender.
Move to an ice bath to stop cooking.
Drain well.

3. Combine

Add tortellini, asparagus, and tomatoes to a large bowl.

Sprinkle in crumbled feta.
Pour dressing over the top.

5. Season and toss

Add salt and pepper to taste.
Gently mix everything together.

6. Chill

Refrigerate at least 30 minutes before serving.

Description

This Asparagus Tortellini Pasta Salad is a fresh, vibrant dish loaded with tender cheese tortellini, crisp asparagus, juicy tomatoes, and creamy feta tossed in balsamic vinaigrette. It is simple to make and perfect for gatherings, meal prep, or a light satisfying side.


Ingredients

Scale
  • 1 pound refrigerated cheese tortellini
  • 1 cup asparagus, trimmed and cut into bite size pieces
  • 1 pint grape or cherry tomatoes, halved
  • 8 ounces feta cheese, crumbled
  • 12 to 16 ounces balsamic vinaigrette dressing
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook tortellini according to package directions. Drain and rinse with cool water.
  2. Bring a pot of water to a boil. Add asparagus and cook 2 to 3 minutes.
  3. Transfer asparagus to an ice bath. Drain well.
  4. In a large bowl, combine tortellini, asparagus, and tomatoes.
  5. Add feta cheese and dressing. Toss gently.
  6. Season with salt and pepper.
  7. Refrigerate at least 30 minutes before serving.
  8. Stir and add extra dressing if needed before serving.

Notes

Best served chilled. Tortellini absorbs dressing as it sits, so refresh with extra before serving. Keeps in the fridge up to 3 days.
