This apple galette recipe using easy puff pastry delivers all the warm, spiced flavor of classic apple pie without the work.

A single sheet of store bought puff pastry becomes a flaky, golden crust wrapped around tender cinnamon apples.

The filling mixes together in minutes, the edges fold themselves naturally for a rustic look, and the entire galette bakes in under 35 minutes.

This is an ideal dessert for last minute guests, cozy fall evenings, or anytime you want a homemade treat that feels impressive without requiring hours in the kitchen.

2 tablespoon lemon juice
1 egg beaten with 1 tablespoon water

Optional: apricot jam for brushing after baking

Steps

Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.

How to Serve

Serve the galette warm or at room temperature. Slice into wedges as you would a pie. The layers stay crisp and flaky when served shortly after baking. It pairs naturally with vanilla ice cream, whipped cream or a drizzle of caramel. This dessert works well for holidays, brunch, or simple weeknight treats.

FAQ

Why is my galette soggy?

Too much juice can prevent the pastry from crisping. The flour or cornstarch in the filling helps thicken the juices. Also make sure the oven is fully preheated to 400 degrees before baking.

Can I use different fruit?

Yes. Pears, peaches or mixed berries work well. If using a juicier fruit, add an additional teaspoon of cornstarch.

Can I make it ahead?

You can assemble the galette a few hours early and refrigerate it unbaked. Bake right before serving for the crispest texture.

How do I reheat leftovers?

Warm slices in a 350 degree oven for 8 to 10 minutes to bring back the pastry crispness. Avoid microwaving, which softens the crust.
